MMmmmMM Egg Rolls!

It's March! I took a day off work today. A day off...what a great thing! You may not know this, but when you get a blog, man, people start to ask you post things!  I can't let you down, Brenda!! Just kidding, I owe you much more than a recipe!! Here's a fun quick post on a little kitchen adventure Sara and I had on Wednesday!


So, we tried a new recipe this week-we decided to make our parents a healthy meal. So imagine you're reading one of those cool cooking blogs...or sigh...Pinterest. Still not going to fall prey to that. We even took mid-cooking pictures. Yeah, this is the real deal. 


Skinny Egg Rolls!
1/2 pound of ground turkey (You can also use ground chicken, pork, etc)
1/2 onion, diced
One package of coleslaw-I recommend using about 1.5 cups.
1 cup of shredded carrots-(way easier to buy them already shredded!)
1 clove of garlic, or more.
1.5 Tb oyster sauce
1.5 Tb soy sauce
1/2 tsp. ground ginger. Or more. Or minced fresh ginger.
Fresh cilantro.
Eggroll wrappers.


1. Fry up your ground turkey. Empty out of the pan.
2. Throw some oil in the pan and toss in your onions and garlic. Let them soften. Put the turkey back in and cook that for about 3 minutes. Add the cabbage and the carrots for an additional 3 minutes and let them soften. Stir in the oyster sauce and the soy sauce. Add the ginger. Mmmm yummy!  It should look like this:
3. All that mixture to cool. Add the fresh cilantro as it's cooling.
4. Assemble the egg rolls-about 1/3 cup of mixture into each egg roll. It may be tricky to figure out how to roll the egg rolls-but you can do it! Pull the closest corner over the filling, fold the sides in, and then roll!

 5. We chose to bake them-400 degrees for about 15 minutes. Flip them over halfway through. You can broil at the end to brown them.  (You could also fry them if you like.)


Let me know if you try them! If you're doing Weight Watchers by chance, these are only 2 points per roll-that's a fun healthy treat!
